    Chocolate Chip Red Velvet Cake

    to bake the cake:

    ½ cup shortening
    2 eggs
    1½ cups white sugar (try substituting brown sugar!)
    1 tablespoon distilled white vinegar
    2 tablespoons cocoa powder (or a dash more)
    1 teaspoon salt
    1 teaspoon vanilla extract
    1 cup buttermilk
    2½ cups sifted white whole-wheat flour
    1½ teaspoons baking soda
    4 tablespoons red food coloring

    to prepare the frosting:
    1 teaspoon vanilla extract
    1 cup whole milk
    5 tablespoons all-purpose flour
    1 cup white sugar
    1 ¼ cups butter
    Chocolate chips (dark, milk, or white chocolate)



    1. Grease two 9-inch round pans. Preheat oven to 350º F.

    2. Cream shortening and sugar. Remember to first soften the shortening by beating with an electric mixer or wooden spoon and add sugar slowly. Add eggs one at a time and beat well.

    3. Mix cocoa powder and red food coloring. Add to creamed mixture. Add salt, buttermilk, and vanilla extract. Fold baking soda and distilled white vinegar into cake batter

    4. Bake for 30 minutes on center rack.


    1. Combine flour and whole milk in saucepan over low heat, stirring constantly until mixture thickens.

    2. Cream sugar, butter, and vanilla extract in a separate bowl as the flour and milk mixture cools completely. Beat until the consistency is fluffy and light.

    3. Beat all together.

    Wait for cake to cook completely. Stack and ice the two cakes. Decorate with chocolate chips (sometimes it’s fun to mix different colored chips!).

    1 cup sweet buttermilk
